Andrew is working on Breaducation, a book on the fundamentals of bread baking, for Ten Speed Press (Fall 2025), and will be sharing a progress report from the book. He’ll feature a sneak preview of some of the recipes and techniques that will appear in the book, like his discovery that dough development via mix and folding is highly overrated in many situations, and that you can get the flavor and long-keeping benefits of sourdough with the speed of commercial yeast by using a hybrid of both. And we’ll have an opportunity to discuss the sorts of content that you’d like to see in a book intended for beginners and seasoned bakers alike.
